ÖZET Pekmez, ülkemizde üretilen geleneksel bir gıda maddesidir. Sunulan bu çalışmada, çeşitli pekmez numunelerinin (andız, dut, hurma, kayısı, keçiboynuzu, üzüm, beyaz zile) bazı eser element, mineral ve vitamin konsantrasyon seviyelerinin belirlenmesi ve bunun yanında beslenme açısından öneminin vurgulanması amaçlandı. Pekmez numuneleri, Malatya Organize Sanayinde üretim yapan Şitoğlu Gıda Fabrikasından, yerel marketlerden ve üretimin aile işletmeciliği şeklinde yapıldığı evlerden temin edildi. Sunulan çalışmada, kuru yakma, yaş yakma ve mikrodalga ile parçalama yöntemlerinin performansları karşılaştırıldı. Önerilen metodun doğruluk ve kesinlik gibi analitik özellikleri Sertifikalı Referans Madde tarafından test edilerek doğrulandı. Pekmez numunelerinde eser element, mineral içeriğini belirlemek için Alev/Grafit Fırın Atomik Absorpsiyon Spektrofotometresi kullanıldı. Ca, Cu, Fe, K, Mg, Na ve Zn elementleri Alevli-AAS ve element içeriği µg seviyesinde olan Al, Cr, Ni, Pb ve Se gibi elementler ise GF-AAS de pirolitik kaplı grafit tüpler yardımı ile analizlendi. Sunulan çalışmada, pekmez numunelerinde suda ve yağda çözünen vitaminlerin eşzamanlı bir ayrımı denendi. Pekmez numunelerinde mevcut olan vitaminlerin iki kısma (suda ve yağda çözünen vitaminler) ayırımında ve biyolojik matrikslerin uzaklaştırılmasında bir ön işlem tekniği olarak Katı-Faz Ekstraksiyonu kullanıldı. Daha sonra, Diyot Array Dedektörü (DAD) bağlı Yüksek Basınçlı Sıvı Kromatografisi ile analizleri gerçekleştirdik. Elde edilen sonuçların ışığında pekmez; insanların temel gereksinimlerinin başında gelen beslenme ihtiyacı açısından yeterli miktar ve kalitede besin alımına destek olabilecek element ve vitaminleri yoğun olarak içerdiği gözlendi. Bu nedenle, çocukluğumuzdan beri yediğimiz geleneksel yiyeceklerimiz arasında yer alan pekmezi diyetimize dahil etmek gerekliliği tarafımızdan önerilmektedir.
ABSTRACT Fruit juice concentrates (pekmez) is one of the traditional food product being produced in our country. The purpose of the present study was to determine the concentration levels of some trace elements, minerals and vitamin of the various fruit juice concentrates samples(prape, mulberry,apricot,date,harnup,juniper,white zile) and to emphasis the importance in terms of the nutrition. Fruit juice concentrates samples purchased from Şitoğlu Food Factory manufacturing in the Malatya Industrial Zone, local markets and microwave diqestion was compared in the presented work. The analytical characteristics of the proposed method (microwave diqestion), the accuracy and precision were tested and verified by a certified reference material. Flame / Graphite Furnace Atomic Absorption Spectrofotometery was used for the determination of trace elements, mineral contents in fruit juice concentrates samples.The elements such as Ca, Cu, Fe, K, Mg, Na and Zn were analysed by flame AAS and the elements content on µg level such as Al, Cr, Ni, and Se were analysed by pyrolic covered the graphite tubes on GF-AAS. In the present work , a simultaneous determination of water?souble vitamins and fat soluble vitamins in fruit juice concentrates samples are attempted. Solid- phase extraction is used as a pretreatmant technique of biological matrices and also as an isolation method of the two fractions (water and fat soluble vitamins) of vitamins, in case the two fraction of vitamins exist in the fruit juice concentrates. Afterwards, we attempted to analyse water and fat-soluble vitamins by high-performance liquid chromatograpy coupled with a diyote array dedector (HPLC-DAD). It has been observed that the fruit juice concentrates is on of the main requirements and has sufficient elements and vitamins in good quality and amount intensively to supply the nutrition need in the fruit juice of the results. Thefore the fruit juice concentrates, we have been eating since eating since our childhood, is should be put into our diet.
