Karakaya Baraj gölünde yaşayan Acanthobrama marmid Heckel, 1843, Leuciscus cephalus (Nordmann, 1840), Chondrostoma regium (Heckel, 1843)'un total glikojen, total lipid ve total yağ asidi bileşiminin mevsimsel incelenmesi

Abstract

Bu çalışmada, Karakaya Baraj Gölü'nde yaşayan Chondrostoma regium, Leuciscus cephalus ve Acanthobrama marmid'in kas dokusunda total glikojen, total lipit ve yağ asidi komposizyonun mevsimsel değişimleri incelenmiştir. Kas dokusunda total glikojen miktarı total lipit miktarından oldukça düşük tespit edilmiştir. Her üç türde total lipit miktarı mevsimsel değişim göstermemiştir (p>0.05). Balıkların kas dokularındaki yağ asidi kompozisyonu yağ asidi standartları kullanılarak gaz kromatografisinde belirlenmiştir. Yağ asitlerinin karbon sayısı 14 (C14) ile 22 (C22 ) arasında değişmektedir. Bütün yıl boyunca tüm türlerin yağ asidi bileşiminde total doymamış (? UFA) ve çoklu doymamış yağ asitlerinin oranı (? PUFA) doymuş yağ asitlerinden yüksek (? SFA); total çoklu doymamış yağ asitleri içinde ?-3 çoklu doymamış yağ asitlerinin oranının ?-6 çoklu doymamış yağ asitlerinin oranından yüksek olduğu tespit edilmiştir. ?-3 çoklu doymamış yağ asitleri içinde de eikosapentaenoik ve dokosaheksaenoik asit yüksek oranda bulunmuştur. Her mevsimde palmitik asit en yüksek yüzdeye sahip yağ asidi olarak bulunmuştur. Elde edilen sonuçlar, bu türlerin çoklu doymamış yağ asitleri bakımından zengin olduğunu ve özellikle ?-3 serisi yağ asitlerinden eikosapentaenoik ve dokosaheksaenik asitlerinin mükemmel bir kaynağı olduğu göstermektedir.

In this study, seasonal variation of total lipid, total glycogen and fatty acid composition of Chondrostoma regium, Leuciscus cephalus and Acanthobrama marmid living in Karakaya Dame Lake were examined. It has been determined that the level of the muscle glycogen was became too less than amount of total lipid. Total lipid content did not show seasonal variation for all species (p>0.05). Fatty acid compositions have been determined in muscle tissues of fish by gas chromatography using a mixture of fatty acid standards. Fatty acids compositions were determined between C:14 and C:22. Total percentages of unsaturated and polyunsaturated fatty acids were higher than saturated fatty acids in four seasons on all selected species. The ration of ?-3 polyunsaturated fatty acids were found to be higher than ?-6 polyunsaturated fatty acids in total polyunsaturated fatty acid composition in all species throughout all year. The ration of eicosapentaenoic and docosahexaenoic acids were found to be higher in total ?-3 polyunsaturated fatty acids composition of all species in throughout all year. Palmitic acid was determined as fatty acid which has the highest percentage for every season all species. The results indicated that these species were excellent sources of polyunsaturated fatty acids with very high levels of ?-3 fatty acids, especially eicosapentaenoic and docosahexaenoic acids.
