| dc.description.abstract | Adıyaman ilinin kültürünü yansıtan belli başlı unsurlar vardır. Bunlardan öndegeleni çiğ köftedir. Adıyaman’da çiğ köfte için aslında “etliköfte” tabirikullanılmaktadır. Bunun yanında “çiküf?e” şeklinde ağız söyleyişi de mevcuttur.Günümüzde etsiz olarak yapılan ve ticari amaçla satılan çiğ köfte türü sonradanortaya çıkmış olup, gerçek Adıyaman çiğ köftesinin tadını vermemektedir. Buçalışmada, çiğ köftenin Adıyaman toplumu nezdindeki yerini, önemini, köklümazisini ve tüketim sıklığını görsellerle birlikte ortaya koyarken, aynı zamandabunun yöre için ne denli önemli bir kültür unsuru hâline geldiğini de gözler önünesermiş olacağız. Çalışmada kullandığımız görseller, Adıyaman’da öteden berioluşmuş olan çiğ köfte kültürünün sarsılmaz önemini tasvir etmesi açısındanbüyük değer taşımaktadır. Çalışmamızın kapsamı Adıyaman il merkezi ilesınırlıdır. Adıyaman’da çiğ köftenin yoğrulması, yenmesi ve artakalanınındeğerlendirilmesi birer geleneğe tabi olup, bu durumlarla ilgili özel kavramlar veritüeller geliştirilmiştir. Adıyaman’da hemen her önemli gün ve olayda çiğköfteye yer verilmesi, çiğ köftenin önemli bir kültür unsuru hâlini aldığını,insanların bu kültürden vazgeçemediklerini ve çiğ köftenin Adıyaman insanınınyaşantısına yön verdiğini göstermektedir. | en_US |
| dc.description.abstract | There are certain elements that reflect the culture of Adıyaman province. The leading one is çiğ köfte. In Adıyaman, the term “etliköfte” is the basic concept used for çiğ köfte. In addition to this, there is a dialect saying such as “çiküf?e”. Today, the type of çiğ köfte that is made without meat and sold for commercial purposes has emerged later and does not give the taste of the real Adıyaman çiğ köfte. In this study, we will reveal the place, importance, deep-rooted history and the frequency of consumption of çiğ köfte in Adıyaman society together with the visuals, but also how important this has become a cultural element for the region. The images we use in the study are of great importance in terms of depicting the unwavering value of the çiğ köfte culture that has been formed in Adıyaman for a long time. The scope of our study is limited to the city center of Adıyaman. In Adıyaman, kneading, eating, and evaluating the çiğ köfte are subject to tradition and special concepts and rituals have been developed. The fact that çiğ köfte is included in nearly every important day and event in Adıyaman shows that çiğ köfte has become an important cultural element, that people cannot give up this culture and that çiğ köfte is leading the life of Adıyaman. | en_US |
